An Easter Treat


I love to read cookbooks and cooking magazines. However, cooking around here, due to kids' tastes and time constraints, tends to be on the basic side. For Easter I decided to make something special. It tasted good, and even looked pretty (though not like anything from a cooking magazine) for a little while. What do you think?

I made a white cake, from a mix. I sliced about three pints of strawberries and added sugar and let them sit and juice. The next morning, I poured some of the juice over the bottom layer of the cake and let it soak in. I whipped a pint of cream and then added 1/2 cup of powdered sugar and about 6 oz of low fat cream cheese (have to save calories somewhere. I put some of the strawberries on the bottom layer, and topped them with the cream mixture. Then I added the top layer and frosted the cake with the remaining cream mixture. I decorated with fresh strawberries, cut in half, then refrigerated the cake. It was yummy!

  1. That looks absolutely delicious. I was so disappointed with our dessert; I made it on Saturday and put it in the fridge instead of the freezer... so we had to wait until Monday night to eat it.
