I posted that my favorite recipe is Puzzel Bars. I'll have to make them soon; the only problem is that my kids don't like coconut so I end up eating too many. Here is the recipe:
2 Cups flour
1 Cup butter
1/2 cup brown sugar.
Work with fingers into crumbles. It should be crumbly, not like a batter. Don't use a mixer. Put 1/2 of this in the bottom of a 13X9 pan. Bake 10 minutes at 350.
2 egg whites
3/4 cup sugar
1/2 teaspoon almond extract
1 Cup coconut
1/2 cup nuts (pecans or walnuts)
1 jar marschino cherries.
Drain jar of cherries. Chop (not too fine--I usually just smush and tear them with my hands) cherries, put on a layer of paper towels to drain, and dust with a little flour.
Beat the egg whites until stiff. Add the sugar and almond extract. Stir in coconut and nuts, then cherries. Spread over bottom crust. Sprinkle remaining crumbs on top. Bake at 350 for 25 minutes.
